- 1 pound of shrimp, boiled, peeled and deveined
- 2 avocados, chopped
- 1/2 red onion, diced
- 6 to 8 grape tomatoes, sliced
- 1 cup pomogranate seeds
- 1 jalapeño, seeded and diced (more if you like spicy)
- 1/2 cup of fresh cilantro, chopped
- 1 – 2 cutie tangerines ( using the segments cut in half)
- 2 limes zest & juice
- 2 – 3 tablespoons extra virgin olive oil
- 4 dashes of tabasco or hot sauce of your choice
- salt & pepper
Mix all veggies and fruit together, add tabasco, olive oil and lime juice, stir well. Add cilantro and shrimp and mix together. Cover and chill for 2-3 hours. Serve in individual glasses, garnish with fresh cilantro.
