Ingredients
WAFFLE BATTER
2 cups all purpose flour
1/4 cup sugar
1/4 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 3/4 cup milk of your choice
2 large eggs
1/4 cup butter or coconut oil melted
1 tablespoon Trabit coffee extract
1 teaspoon red gel food color
SWEET WHIPPED MASCARPONE
8 ounce mascarpone
8 ounce heavy whipping cream
1/4 cup confectioner sugar
1 teaspoon vanilla
KAHLUA NUTELLA SAUCE
1/2 cup Nutella
1 –2 tablespoons Kahlua
Fresh raspberries or strawberries for serving
Instructions
WAFFLE BATTER
In a medium size bowl place all of the dry ingredients. In a smaller bowl add the milk, eggs, melted butter or oil, coffee extract and red gel food coloring. Whisk the wet ingredients well, then add to the bowl of dry ingredients and whisk until everything is fully incorporated.
Cook waffles in your favorite waffle iron.
SWEET WHIPPED MASCARPONE
Place the mascarpone cheese, with vanilla and sugar in a mixing bowl, using an electric mixer with a whisk attachment whisk until mascarpone is light and fluffy. Add the whipping cream and whip until peaks form. Just like making whipped cream. Refrigerate until ready to use.
KAHLUA NUTELLA SAUCE
Sauce can be made in a small pan on the stove top, or in a glass bowl in the microwave. Slowly heat the Nutella on a lower heat, to avoid burning. Start with 2 tablespoons Kahlua, you can add more to taste or to thin the chocolate sauce. If making for children you can use heavy cream or milk to replace the Kahlua.
Notes
If you are only making waffles for two or three people you can cut this recipe in half. A full recipe would be great for a family or if you are having a dinner party and cooking for several couples.
For nut allergies you can make a chocolate sauce with 4 ounces dark chocolate chips and 4 ounces heavy cream. Place either in a glass bowl and microwave in 30 second intervals until melted
