Ingredients
Petite Filet
2 – 4 (6-8 ounce) beef tenderloin steaks about 1 inch thick
Favorite steak seasoning
Compound Butter (King Soopers has a parmesan garlic basil butter that is great)
Vegetables
Baby potatoes gold, purple or red 3 -4 per person
Asparagus tough stems cut off (4-5 per person)
Fresh Parmesan Cheese
Instructions
Steak: bring out of the refrigerator 30 minutes prior to cooking. This is very important!!!
Potatoes : while steaks are coming to room temp. Wash and cut your potatoes in half. Place them in a steam basket in the instant pot. Add 1 cup of water. Pressure cook on high 6 -8 minutes depending on size. When time is up allow 5 minutes before releasing steam and removing the lid. Remove the potatoes.
Steak & Air Fryer : preheat air fryer at 400* for 15 minutes. You are preheating just like a grill or saute pan. Season the steaks on both side. Spray the grill pan with oil, set the steaks on top of grill pan, add potatoes around, drizzle with olive oil, sprinkle with salt & pepper. Air fry for 5 minute, open and give your potatoes a toss around. Cook for another 5 minutes. I do not turn my steak. I like the presentation side to get as much color as possible. Remove the steak and potatoes. Add the asparagus season and cook for 3 – 4 minutes as steak is resting.
Grate parmesan on potatoes plate with the steak, place a spoon full of compound butter on the steak, garnish with asparagus with a little more parmesan.
