Pumpkin Tiramisu

If you are like me and love fall and love the flavor of pumpkin you will love this tiramisu. Its a nice and light dessert prepared in a martini glass or in a mason jar. The flavors of pumpkin, chocolate, salted caramel are sure to please everyone.

PUMPKIN CARAMEL TIRAMISU

1 cup heavy whipping cream
8 ounces mascarpone cheese
1 cup pumpkin puree
1/2 cup sugar
1 package lady fingers
1/2 cup Kahlua or Frangelico liquer
1 cup espresso cooled
1 cup caramel (made fresh or purchased)
1 Toberlone chocolate bar chopped or toffee bits
1/2 cup cocoa powder
Flaked sea salt

Using an electric mixer, whip the mascarpone, pumpkin and sugar until well incorporated. Slowly add the whipping cream and whip until firm.

Combine the espresso and liquor for dipping. Dip one lady finger at a time to prevent from getting soggy.

To assemble: layer a lady finger on the bottom of a martini glass or mason jar. Spread the mascarpone cheese mixture over the lady finger. Sprinkle with cocoa powder, drizzle with caramel, sprinkle with sea salt, top with toberlone or toffee bits. Repeat the procedure until the martini glasses or mason jars are full. Allow the tiramisu to set, in refrigerator about 1 1/2 hours.
The last time I made this tiramisu I took a rolling pin and crushed chocolate hazelnut piroutte cookies on top.

Makes 8 small servings
