I have been getting requests for the recipe of this gorgeous looking salad I posted last night. Very flavorful, summery and healthy.
I cut my chicken breasts in half length wise, to make 4 ounce portions. I used Bella’s BBQ rub since I still had plenty left over from Memorial Day. I really like the flavor of the rub with the strawberry salsa. https://bellabistro.com/bellas-bbq-rub/ You can cook your chicken breasts on the grill, on a cast iron skillet, on a sheet pan in the oven or use your air fryer. The choice is yours.
Strawberry Salsa
1 pint strawberries finely diced
1 small jalapeno seeded and diced (or half depends on how spicy you like it)
1/2 cup finely diced red onion
zest and juice of one lime
1/4 cup chopped fresh basil
1/4 cup chopped fresh cilantro or parsley
2 – 3 teaspoons honey or pure maple syrup
pinch of salt & pepper
Mix all your ingredients together in a small bowl.
Spinach & Grain Salad
Fresh spinach
cooked grain of your choice – farro – brown rice – quinoa – millet
sliced dried mango
raw unsweetened coconut flakes
pepita seeds or sliced almonds, macadamia nuts, cashews
Mango Vinaigrette
1/4 cup Mango Vinegar ( King Soopers)
1/2 cup Extra Virgin olive oil
salt & pepper
In a small bowl add the mango vinegar, give a pinch of salt & pepper and slowly whisk in the EVOO.
