Sometimes its all about presentation.. I love these swing top mason jars for a variety of food product. Have your guests make their own crostini. Here I have cut cherub tomatoes, basil, minced garlic, salt, pepper & EVOO in one, and in the other I have avocado pesto. I found this thin pork belly I fried up, you can use thin bacon.
Here is the avocado pesto
AVOCADO PESTO
1 large bunch fresh basil
2 ripe avocados
½ cup hemp seeds
zest and juice of one lemon
3 cloves garlic
1/2 teaspoon sea salt
1/4 teaspoon pepper
½ cup avocado oil
Place all ingredients in a food processor or blender. Blend until well combined and smooth. Taste and adjust seasoning if desired. Try a little red pepper flakes.
To use with pasta, cook your pasta per instructions, reserve a cup of pasta water. Add your cooked pasta to a warm sauté pan, add spoon fulls of avocado pesto add a little of the pasta water at a time to thin pesto.
