Strawberry & Brie Skewers

These are as easy as they are beautiful and delicious. If you are vegetarian you can leave off the prosciutto. These are perfect with a glass of bubbles to start a party and really wonderful for Sunday Brunch.

Strawberry & Brie Skewer

1 dozen small bamboo skewers

1 dozen nice strawberries

4 prosciutto slices

1 small wheel of brie

12 basil leaves

Chocolate Balsamic Glaze

2/3 cup balsamic vinegar

3 tablespoons sugar

1 1/2 ounces bitter sweet chocolate bar finely chopped

Glaze:

Place vinegar and sugar in a small sauce pan. Over medium low heat reduce by half. Take the pan off the heat and whisk in the chocolate pieces. Whisk until the chocolate is melted. Set aside to cool.

Prep:

With a damp paper towel, clean strawberries and cut in half. With kitchen shears cut each prosciutto slice into six pieces. Depending on your preference, you can cut the brie as is, or using a knife scrape or cut the top rind off. Cut into 12 triangles or squares. If your basil leaves are small, leave as is. If they are larger cut in half.

Skewers:

Start threading your small bamboo skewer. One strawberry half, one prosciutto, one piece basil, one piece brie, one basil, one prosciutto, one half strawberry. This can be made ahead of time, wrapped with plastic wrap and store in the refrigerator. Drizzle with chocolate balsamic glaze just before serving. Or have the chocolate balsamic glaze in a small bowl with a small espresso spoon and let people drizzle their own.
