Shrimp & Brown Rice Salad

This week I have a goal to prepare beautiful spring time healthy lunches. Monday’s lunch is fantastic.

Dressing:

  • 1 tsp red pepper flakes
  • juice of 3 limes
  • 1 clove garlic, minced
  • 1/4 cup fish sauce
  • 2 tablespoons grated carrots
  • 2 tbs honey

Whisk all ingredients.

Brown Rice:

  • 1 cup brown rice, cooked and cooled
  • thinly sliced snap peas, fresh fennel, red onion, pistachios & mint

Combine all ingredients with 1 tablespoon dressing and toss.

Shrimp:

  • shrimp
  • salt, lemon pepper & paprika

Season shrimp and sauté just until pink.

Salad:

  • arugula
  • Cara Cara oranges

Plate greens, oranges, brown rice & top with shrimp. Drizzle with a tablespoon of dressing.

I’ll be using the extra dressing tomorrow for fresh salmon spring rolls.
